An exciting role for an experienced Director of Food & Beverage and Product Development has been created to join our P&O Australia team based in our office in Chatswood, Sydney. Reporting into the newly appointed VP Guest Experience – Hotel Operations, your primary purpose is to ensure P&O Cruises Australia's shipboard F&B offering is profitable and exceeds guest expectations by driving the delivery of innovative, high-quality and consistent F&B product and services across all ships in the fleet in line with the company's Environmental and Public Health standards.

Your key responsibilities will include but are not limited to:

  • Lead the operational activities, assignments, and projects of shoreside and shipboard F&B management.
  • Manage a team of passionate and highly skilled individuals.
  • Comprehensively review all product offerings, processes, and policies to identify areas of improvement and increased efficiency.
  • Develop long term strategies to increase operational effectiveness and guest satisfaction of shipboard F&B departments.
  • Manage all F&B costs to ensure operations are within budget
  • Responsible for the attainment and growth of F&B revenue targets.
  • Conduct regular meetings with shoreside and shipboard hotel teams to communicate policies, discuss issues and coordinate solutions. Establish structured communication channels for inter-team communication.
  • Conduct regular competitive benchmarking of the cruise and hotel industry regarding product, service, and technical innovations.
  • Provides insights into trends across food and beverage, hotel and revenue areas and determines their relevance/alignment to our product mix and on-board demographics.
  • Review current performance of all F&B product initiatives and offer alternative ideas to drive guest satisfaction (NPS).

About You:

You will be a strategic Leader with a clear focus on achieving results within a dynamic environment. A confident leader with excellent communication skills, that thrives under pressure and a maverick when it comes to stakeholder management. A thorough understanding of how to drive performance and new initiatives using data analytics whilst ensuring your team is engaged and empowered to drive positive change. As the dedicated F&B Director for P&O Australia, you will have a high profile within the broader organisation and represent P&O across our house of brands. As this is a highly demanding role but equally rewarding, you will be an individual that loves a fast paced and challenging environment with the reward of delivering a best in class guest experience.  This role requires a strong leader, with good commercial acumen, influencing skills and the ability to pivot quickly with an entrepreneurial spirit.  This will set you apart from your competitors.

To be successful in the role, you will have demonstrated:

  • 10 years Food & Beverage operational management experience
  • 5 years land-based Hotel experience
  • 10 years' experience in a Leadership role
  • Cruise industry experience is highly desirable however similar roles within tourism, hospitality, multichain hotel group or large catering companies are equally desirable
  • Extensive experience and knowledge in all aspects of food and beverage operations including supply chain logistics, cruise ship galley operations and optional dining venues.   
  • Thorough knowledge of all beverage related products and all related markets, pricing, trends, handling receiving and inventory control procedures.
  • Proven ability to create and deliver product innovations with a positive effect on the bottom line
  • Develop highly successful teams through leading, coaching, motivating practices
  • Strong understanding of financial management – budgets, accruals, and forecasting
  • Solid analytical skills and a data-driven approach to help glean insights to make recommendations
  • Commercial ability to evaluate/negotiate agreements and contracts
  • Project and time management skills with effective communication skills both verbal and written
  • Flexibility to work outside standard business hours including weekends as required
  • Ability to commit to regular travel with multiple days away from home
  • Valid passport and fully vaccination status including boosters
