It's an exciting time to join P&O Cruises with the brand investing in refreshing its fleet with two new 3000+ guest Grand Class ships, Pacific Adventure and Pacific Encounter, arriving in 2020 and 2021. 

This position is responsible for ensuring P&O Cruises Australia's on board F&B offering is profitable and exceeds guest expectations by driving the delivery of innovative, high-quality and consistent F&B product and services across all ships in the fleet in line with the company's Environmental and Public Health Standards. The successful candidate will ensure strategic aspirations for the Brand and Product are achieved through enhancements made to the F&B offer on board. 

Responsibilities will include:

  • Product development - competitor benchmarking, ensuring consistency and performance of existing product, creating and implementing F&B product offerings in line with P&O Cruises' brand pillars
  • Customer Satisfaction – setting and monitoring guest satisfaction targets for F&B operations and working closely with shipboard F&B teams to ensure their attainment
  • Operational Management – indirectly managing, and ensuring the operational efficiency of, on board F&B Departments (circa 1,000 crew)
  • Cost Management – developing and reforecasting budgets, managing suppliers and inventory within budget, ensuring effective utilisation of supply chain policies and procedures
  • Revenue Management – driving YOY growth in F&B revenue, monitoring and flagging threats and opportunities 

About you:

You're passionate about all things F&B and love keeping on top of market developments and trends. You're creative and innovative AND commercial and analytical. You're a communicator, a collaborator and a driver of change. 

You'll also bring:

  • 7+ years' senior F&B operational management experience both within the cruise industry and in land-based hotels
  • extensive experience and knowledge in all aspects of F&B operations including supply chain logistics, cruise ship galley operations and optional dining venues
  • a thorough knowledge of all beverage related products and all related markets, pricing, trends, handling receiving and inventory control procedures
  • strong people management and leadership skills; proven ability to introduce clear, structured management frameworks and routine to large scale F&B teams
  • proven success in creating and delivering product innovations with a positive effect on the bottom line and guest satisfaction
  • strong relationship building and influencing skills; proven ability to work cross departmentally to develop and deliver business objectives
  • commercial and financial acumen, with strong budget management, analytical and numerical ability
